A5 Wagyu Cuts We Serve

From the delicacy of the eye fillet, one of the rarest cuts with only around 7kg sourced per cow, to indulgent favourites like Hokkaido sirloin and cube roll, every cut is selected for its balance and depth. Guests can also explore flavour-forward options such as oyster blade, short rib and rib cap, as well as more distinctive offerings including wagyu tongue, ox tongue, and Mayura flank.
